Lightened Up Mashed Potatoes

What you need: 

  • 1 lb potatoes, peeled and chopped

  • 2 cups chopped cauliflower 

  • 2 tbsp butter 

  • ½ cup cottage cheese 

  • salt and pepper


How to do it: 

  1. Add potatoes to a pot of cold + salted water and bring to a boil

  2. Once boiling, remove lid and cook for 8 minutes

  3. Add in cauliflower and cook for another 7-8 minutes or until fork tender 

  4. Drain liquid and add potatoes + cauliflower back into the pot

  5. Gently mash with a fork 

  6. Add in butter, cottage cheese, salt and pepper and gently combine 

  7. Enjoy!
