Spinach Egg Bites

What you need: 

  • 12 eggs (or equivalent egg whites)

  • 1 cup cottage cheese

  • ¼ cup milk (I use fairlife)

  • 2 cups spinach (I like to use frozen)

  • Salt and pepper to taste 

  • Avocado oil 

  • ½ cup shredded cheese 


How to do it: 

  1. Preheat oven to 350 

  2. Defrost spinach and wring out all moisture in a kitchen towel

  3. Combine eggs, cottage cheese, milk, salt and pepper and whisk

  4. Add in spinach and combine 

  5. Portion into a well oiled muffin tin (I like to use a silicone muffin tin)

  6. Top with shredded cheese 

  7. Bake for about 30 minutes 


Key tip: 

Use any vegetables you like! I love to do broccoli with cheddar or mushrooms and onions!
