Spinach and Mushroom Egg Bites
What you need:
12 eggs (or equivalent egg whites)
1 cup cottage cheese
2 cups spinach (I like to use frozen)
1 cup chopped mushrooms
Salt and pepper to taste
How to do it:
Preheat oven to 350
In a large pot cook the pasta 1 minute less than the directions
While the pasta is cooking, blend cottage cheese and milk until smooth
Once the pasta is drained, using the same pot, add butter and flour to create the roux
Once well combined, add cottage cheese mixture and ½ cup shredded cheese (save the rest for later)
Add the smoked paprika and pepper
Once all combined in the pot, add to a 9x9 baking dish
Top with the remaining ¼ cup of shredded cheese
Bake for 20 minutes and enjoy!
