Spinach Egg Bites
What you need:
12 eggs (or equivalent egg whites)
1 cup cottage cheese
¼ cup milk (I use fairlife)
2 cups spinach (I like to use frozen)
Salt and pepper to taste
Avocado oil
½ cup shredded cheese
How to do it:
Preheat oven to 350
Defrost spinach and wring out all moisture in a kitchen towel
Combine eggs, cottage cheese, milk, salt and pepper and whisk
Add in spinach and combine
Portion into a well oiled muffin tin (I like to use a silicone muffin tin)
Top with shredded cheese
Bake for about 30 minutes
Key tip:
Use any vegetables you like! I love to do broccoli with cheddar or mushrooms and onions!
