High Protein and Fiber Mac and Cheese

What you need: 

  • 1 box Banza shells

  • 1 cup cottage cheese

  • 2 tbsp milk of choice

  • 2 tbsp butter

  • 2 tbsp flour (I used brown rice flour)

  • ¾ cup shredded cheddar cheese 

  • 1 tsp smoked paprika

  • Pepper to taste 


How to do it: 

  1. Preheat oven to 350 

  2. In a large pot cook the pasta 1 minute less than the directions 

  3. While the pasta is cooking, blend cottage cheese and milk until smooth

  4. Once the pasta is drained, using the same pot, add butter and flour to create the roux

  5. Once well combined, add cottage cheese mixture and ½ cup shredded cheese (save the rest for later)

  6. Add the smoked paprika and pepper

  7. Once all combined in the pot, add to a 9x9 baking dish 

  8. Top with the remaining ¼ cup of shredded cheese

  9. Bake for 20 minutes and enjoy!
