Veggie-Packed Chili
What you need:
1 lb ground beef (can use chicken or turkey)
2 carrots, chopped
2 celery stalks, chopped
1 bell pepper, chopped
1 yellow onion, diced
1 14.5 oz can fire roasted tomatoes
1 14.5 oz can tomato sauce
1 14.5 oz can black beans
14.5 oz can broth
1 tsp smoked paprika
¼ tsp chili powder
Salt and pepper to taste
Olive oil
Topping suggestions:
Plain greek yogurt or sour cream
Chopped red onion
Pickled jalapenos
Avocado
Cheese
Tortilla chips
How to do it:
In a large pot with a light drizzle of olive oil, add the ground meat
Once the meat is browned, add in carrots, celery, pepper, and onion
Let soften for 5-7 minutes
Add fire roasted tomatoes, tomato sauce, beans and broth (use the can from the tomato sauce to measure the broth and get the rest of the sauce out!)
Once combined, add seasonings
Cover and let simmer for ~1 hour
Top with preferred toppings and enjoy!
