High Protein Cottage Cheese Pancakes
What you need:
½ cup cottage cheese
2 eggs
2 tbsp ground flax seeds
2 tbsp oat flour
1 tsp vanilla extract
1 tsp cinnamon
½ tbsp maple syrup (or sugar free alternative)
Avocado oil/butter for pan
How to do it:
Combine all ingredients in a blender and blend until smooth
On a lightly oiled skillet, pour batter into the pan about 3-4 inches in size
One the ends start bubbling flip and cook on the other side
Remove and Enjoy!
Makes 2 servings

Paired with almond butter/peanut butter and fresh fruit!
