High Protein Cottage Cheese Pancakes

What you need: 

  • ½ cup cottage cheese

  • 2 eggs

  • 2 tbsp ground flax seeds

  • 2 tbsp oat flour 

  • 1 tsp vanilla extract 

  • 1 tsp cinnamon

  • ½ tbsp maple syrup (or sugar free alternative)

  • Avocado oil/butter for pan

How to do it: 

  1. Combine all ingredients in a blender and blend until smooth

  2. On a lightly oiled skillet, pour batter into the pan about 3-4 inches in size

  3. One the ends start bubbling flip and cook on the other side 

  4. Remove and Enjoy!

  5. Makes 2 servings 

How I eat it: 

Paired with almond butter/peanut butter and fresh fruit!
